Trader Joe’s Masala Burgers with Potatoes & Brussels Sprouts

A tasty (and vegetarian) twist on a burger and fries. It’s particularly delicious when topped with a carrot green pesto.

  1. Preheat the oven to 500.
  2. Wash and halve or quarter the potatoes.
  3. Toss in a bowl with olive oil, salt, pepper, and half of the garlic.
  4. Roast on a baking sheet for about 30 minutes, tossing and turning every 10 minutes, until nicely golden.
  5. Wash, trim, and halve the brussels sprouts.
  6. Toss with salt, pepper and olive oil.
  7. Roast on a baking sheet for about 20 minutes (can go in with the potatoes) until seared on a couple of sides.
  8. Prepare the masala burgers according to the directions.
  9. Add fixings to the burgers.
  10. Add 1 tbsp of olive oil and remaining garlic to potatoes after they come out of the oven. Serve hot.

1 lb brussels sprouts
Olive oil
Salt & pepper
2 garlic cloves, minced
