Pear and Walnut Muesli

Served by Tara & Nate at a Lost River weekend in 2017, this was a group favorite.

  1. The night before, toss the grated pears with the lemon juice to stop them browning and combine with the oats, seeds, and 1 Tbsp chopped walnuts in a large bowl. Add the agave nectar, pear or apple juice, and the milk or water. Stir well, cover, and refrigerate.
  2. The next morning, stir in a rounded Tbsp of yogurt and the remaining chopped walnuts. Serve and top with extra yogurt, walnut halves, and fresh pear slices.

2 firm pears, cored and coarsely grated
lemon squeeze
1 heaping cup of old-fashioned oats
2 Tbsp mixed seeds
2 Tbsp chopped walnuts
1 Tbsp agave nectar
Scant 1/2 cup fresh pear or apple juice
Scant 1/2 cup milk or water
Plain yogurt, a few walnut halves, and fresh pear slices, to serve
